  • Our oldest cellar is located in the French Charente-Maritime department. It holds the barrels filled with our thoroughly elaborated eau-de-vie. In this place, time, wood, and perfect blending skills lead to the production of upscale products.
  • In the French Vendée department, our second production site is meant for our local and traditional creation: the French aperitif Troussepinète.

Founded in 1988, la Maison de Cognac Lise Baccara has established itself as a unique signature on the cognac market. Combining tradition and innovation, our collection is intended as much for long-time cognac lovers as for new ones.

Our master liquor maker, Gérard Paignon, carries on a familial know-how, passed on for three generations, by bringing delicate cognac recipes and unique creations to life. Cognac is a French spirit crafted from white grapes, distilled twice in copper alembics, following the double-distillation method. Then, it is aged in oak barrels. Depending on how long it has been aged, a cognac bottle can carry different names: Cognac VSOP (Very Superior Old Pale), Cognac XO (Extra Old), Cognac XXO (Extra Extra Old), Cognac Extra.

More than 28 years ago, the Maison Lise Baccara chose to settle in the French department of Vendée, in the lovely town of Saint-Martin-Lars-en-Sainte-Hermine. This choice was deliberate: It is in this generous terroir that our Maison has decided to carry on the tradition of the Troussepinète production. The Troussepinète is a traditional French aperitif and a signature drink from the Vendée department.

This French herbal liquor is made from wild blackthorn leaves, once renowned for cleansing the body and aiding the removal of toxins.

Each year, almost 3 metric tons of young blackthorn shoots are handpicked in Charente-Maritme and Vendée’s countrysides. Then, these shoots are immersed in wine and eau-de-vie, following an artisanal process only known to our master liquor maker.

Lise Baccara’s cellar in Vendée is entirely dedicated to the production of Troussepinète, making it a true elixir from Vendée. Being on site allows us a production true to ancestral methods of the region and authentic aromas.
